A quick dinner option last night turned into a great lunch encore for today. Chicken salad with fathead dough+ tortillas (I say the plus because I added some psyllium husk for some body which seemed to keep them intact when I pan fried them).
A full-fat yogurt with a drizzle of Yacon Syrup, aka "honey" in our house, adds a bit more protein and fats with some sweetness. Rounded everything out with strawberries and parmesan Whisps (Amazon and Costco have individually bagged ones which a great for lunch packing. Check it out here.)
