Now this is a REAL BENTO BOX kid's keto lunch! I made some keto sushi rolls for dinner last night and my daughter asked for sushi today for lunch (minus the green stuff...avocados and cucumbers hahaha). Not to worry, the cauliflower rice makes up for the green deficiencies in my book.
Keto sushi is made with cauliflower rice (see my sushi rice recipe), Smoked salmon, scrambled egg and a bit of cream cheese, rolled up in a seaweed wrap. Included some edamames (Remember a cup of shelled edamames has 8.1 grams of fiber and only 5.6g Net Carbs. It may be a bit high for a Strict Keto dieter, but for the kids, its a perfect lower carb veggie option that they love.) Blueberries and a half of a chocolate keto cookie by Quest rounds everything out, and since its winter with a bunch of germs, I included a frozen antioxidant drink from Young Living, called NingXia. I LOVE Outer Aisle cauliflower thins because they are so versatile. We've used them for little personal pizzas as well as sandwich bread for our keto sandwiches, They hold up and stay together when picked up and they taste great. Today we used them as tortillas for our chicken quesadillas. We were at a party and oddly enough, by daughter made it known that she didn't care for normal corn tortillas (odd preference or Keto mom win?? I'll assume the later haha). In any case, I went with it and low and behold, a winner.
She also asked for extra sour cream and cheese, which I'm sure contributed to the success. Haha! A quick dinner option last night turned into a great lunch encore for today. Chicken salad with fathead dough+ tortillas (I say the plus because I added some psyllium husk for some body which seemed to keep them intact when I pan fried them).
A full-fat yogurt with a drizzle of Yacon Syrup, aka "honey" in our house, adds a bit more protein and fats with some sweetness. Rounded everything out with strawberries and parmesan Whisps (Amazon and Costco have individually bagged ones which a great for lunch packing. Check it out here.) That's it! Happy lunch packing! Hot dogs and protein chips for the win. To me packing school lunches are all about striking a balance. Too much food and more of the "treat" items get eaten and less of the "substance" items. Something that looks too "odd" or too "healthy" has a greater chance of getting left behind because the kids don't want to deal with explanation – I get it. Who wants to be the "weird" kids with all the "hippy food" LOL.
So today we went with all natural, organic and sustainably raised hotdogs. Just look for ones with no antibiotics and no hormones and those should be all keto approved. I pair it with sugar-free ketchup. We love the Primal Kitchen brand (hint the best price I've seen is on Amazon. I included the link – your welcome haha). Protein chips from Quest help cut the carbs without sacrificing the taste or more importantly the crunch! Lastly, fruit, cheese and olives!!! (My daughter LOVES olives! #ketomomwin) That's it. Simple and familiar equals happy faces at lunchtime and full bellies. What else can a #ketomom ask for? Oh and for those who keep asking about there cool lunch boxes...Amazon baby. We use the mini cauliflower crusts from Outer Aisle (Click here for a link) and love it because it doesn't contain any hidden carbs—just cauliflower, parmesan cheese, salt and pepper = PERFECT keto!
Blueberries and edamame (1 cup of edamame contains 14g net carbs so this small serving is a great keto veggie option for kids at ~3g net carbs) are a perfect fruit/veg combo. Stonyfield has whole milk yogurt tubes with a low enough sugar/carb content that I tolerate it for the kids (~7g carbs per tube depending on flavor). Lastly I like to add a sweet treat, so today I added a Choc Zero chocolate bark with coconut shavings – my all time favorite (and now my son's all time favorite pre-packaged sweet treat on-the-go option). My dinner rolls made an encore performance as sandwich rolls today. Egg salad for ??and ham with avocado-mayo for ??. Berries (a staple), pork rinds (they LOVE them) and Keto chocolate chip cookies!
