Personal pizzas on cauliflower crust makes a fun keto lunch that is a familiar sight for my kiddos. My son loves the pizzas and my daughter tolerates it (ha!). We use the mini cauliflower crusts from Outer Aisle (Click here for a link) and love it because it doesn't contain any hidden carbs—just cauliflower, parmesan cheese, salt and pepper = PERFECT keto!
Blueberries and edamame (1 cup of edamame contains 14g net carbs so this small serving is a great keto veggie option for kids at ~3g net carbs) are a perfect fruit/veg combo. Stonyfield has whole milk yogurt tubes with a low enough sugar/carb content that I tolerate it for the kids (~7g carbs per tube depending on flavor). Lastly I like to add a sweet treat, so today I added a Choc Zero chocolate bark with coconut shavings – my all time favorite (and now my son's all time favorite pre-packaged sweet treat on-the-go option). What do you think of this lunch? Would your kiddo(s) eat this?
